Gluten Free Chocolate, Chocolate Chip Muffins Recipe

Mmm…these chocolate, chocolate chip muffins are Gluten free and Vegan and as a bonus they can be adapted for an anti-candida diet!  They are rich, moist and delicious.  Definitely hit the spot when you are having a chocolate craving.

CHOCOLATE, CHOCOLATE CHIP MUFFINS

~makes 12 muffins~

Ingredients:

3/4 cup brown rice flour

1 cup tapioca flour/starch these

1/4 cup cocoa powder

3/4 cup coconut sugar (use Xylitol for anti-candida)

2 teaspoons baking powder

1/2 teaspoon baking soda

1 1/2 teaspoons xanthan gum

1/2 teaspoon sea salt

1 cup unsweetened coconut or almond milk

1/2 cup grapeseed oil

1 egg OR 1 flax-egg for Vegan version

1 teaspoon vanilla extract

1 cup unsweetened baking chocolate, chopped OR 1 cup Enjoy Life dark chocolate chips, separated81wmkcUAMiL._SX522_

Directions:

Preheat your oven to 400 degrees F and place your oven rack in the middle of the oven. Line 12 muffin cups with unbleached liners and give a quick spray to each with coconut oil spray.

In a large mixing bowl mix your dry ingredients using a whisk to remove lumps and ensure thorough mixing. in a smaller separate bowl combine your wet ingredients and then pour this into the dry and using a wooden spoon combine the two. Now fold in your chocolate chunks, reserving about 1/4 cup to garnish each muffin before baking. The batter WILL be thick and NOT runny.

Place about 1/4 – 1/3 cup batter into each muffin cup and then top with a sprinkle of chocolate.

Bake for about 15 minutes or until a toothpick comes out clean. Let these sit in the muffin tin for 5 minutes before removing to a cooling rack.
