I love brownies, who doesn’t?!  It reminds me of being a kid again and begging my Mother to let me to lick the bowl and mixing spoon.  And of course there is that smell of them in the oven…yum!

Okay, now back to the recipe:

Paleo Fudgy Brownie Recipe

~Makes about 12 brownies~


  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy and unsalted cashew butter
  • 1/2 cup Coconut Sugar (*use Xyla if on a candida diet)
  • 1/3 cup coconut oil, melted
  • 1/4 cup unsweetened non-dairy milk (hemp, almond or coconut work well)
  • 2 eggs
  • 1 teaspoon vanilla
  • coconut oil spray for greasing
  • * Optional – add up to 1/3 cup dark chocolate chips to make these more rich and chocolatey.  I like Enjoy Life Dark Chocolate Chips or Lily’s Stevia Sweetened Chips for a Candida Diet


  1. Preheat oven to 325 degrees and grease an 8 x 8-inch pan.
  2. Add all your dry ingredients to a medium sized mixing bowl and using a whisk combine to make sure there are no lumps. In a separate bowl, combine all of your wet ingredients
  3. Mix the wet into the dry and pour into your prepared baking dish.
  4. Bake for 40 – 45 minutes, or until a toothpick comes out clean. Enjoy!
