Zucchini Noodle Salad for a Candida Diet

A healthy and delicious noodle salad for a candida diet. This recipe uses zucchini as the base to create a delicious plant-based dish that’s both healthy and delicious.

There’s something about noodles that are so fun to eat. Am I right? Do you remember that scene from Lady and The Tramp with that long piece of spaghettiit reminds me to not take life so darn seriously. Now, what if you could turn a vegetable into a noodle? ….head exploded!!

I bought this spirilizer years ago, and have been getting so much use out of it lately for my clients on Candida and Paleo diets. It’s an awesome kitchen gadget to have on hand, and you can buy them at a reasonable price on Amazon! The one I have is the 5 Blade Spiralizer. It’s light weight, easy to use and has several different inserts to make different sized noodles and other fun shapes.

Zucchini Noodles

Zucchini and then some

Obviously Zucchini is the base of this dish, which I spririlized. In addition to that I’ve added the following ingredients to give this Anti-Candida Zucchini Noodles dish a whole lot of flavor (with very little prep work):

sun-dried tomatoes,
black olives,
green onions, and
lemon juice

This recipe is super easy to prepare, you just add everything into your mixing bowl and toss it all together. Don’t be afraid to get your hands in there…that’s the fun part!

Zucchini Noodle Salad for a Candida Diet

Paleo | Vegan | Anti-Candida | Gluten-Free | Plant-Based

Servings 2

Ingredients

  • 2 large zucchini spirilized (I like this Spirilizer over on Amazon)
  • 1/4 cup sun dried tomatoes in olive oil
  • 1/4 cup chopped black olives
  • 2 scallions minced
  • Juice of 1 lemon
  • 1/8 - 1/4 teaspoon sea salt

Instructions

  1. Wash your zucchini using a vegetable brush (i like this one) and prepare them into noodles using your spirilizer.  Place in a large mixing bowl.
  2. Add your sun-dried tomatoes allowing oil to drizzle in as well, olives, scallions, lemon juice and sea salt.  Using your hands mix everything together, allowing the oil to spread and everything to combine evenly.
  3. Taste for seasoning and add more sea salt if necessary.
  4. Serve and enjoy!

Recipe Notes

*This dish can be served topped with grilled chicken, salmon, shrimp or pan fried tofu!
